4 1/2 cups of chopped veggies -- only 137 calories. I have found that $1 stores (includes 99 cent stores) sell Lite Italian dressings containing only 5 calories in two tablespoons.

Recipe Ingredients for Big Salad

1/2 cup lettuce, shredded
1/2 cup green cabbage, shredded
1/4 cup red cabbage, shredded
1/4 cup bell peppers, chopped
1/4 cup yellow onions, chopped
1/4 cup zucchini, chopped
1/4 cup cucumber, chopped
1/4 cup celery, sliced
1/4 cup carrots, chopped
1/4 cup turnip, chopped
1/4 cup radishes, chopped
1/4 cup raw beets, chopped
1/4 cup eggplant, chopped
1 medium mushroom, chopped
1 medium tomato, diced
1/4 cup broccoli, chopped
1/4 cup cauliflower, chopped

Recipe Directions for Big Salad

  1. Shred, chop slice and dice all veggies

  2. Add a low cal dressing as suggested above

  3. Toss together
