Recipe Ingredients for Big Quinoa Bowl

2 cups quinoa, rinse well
4 cups water
1 tsp salt
1 T olive oil
4 medium potatoes,diced
1 large onion, chopped
1 clove garlic, minced
1 cup walnuts, toasted
2 cups asparagus, steamed
1 T olive oil

Recipe Directions for Big Quinoa Bowl

  1. Bring quinoa, salt, water to a boil

  2. Simmer 20 minutes. Set aside.

  3. Warm 1 T olive oil in skillet.

  4. Add potatoes and a pinch of salt.

  5. Toss, cover for a few minutes.

  6. Uncover and continue tossing until they are cooked thru and crunchy.

  7. Season with salt and pepper.

  8. Set aside on a plate.

  9. Warm 1 T olive oil in same skillet.

  10. Add onions and garlic.

  11. Cook (5 minutes) until they soften.

  12. Toss quinoa with splash olive oil.

  13. Serve each bowl of quinoa topped with potatoes, onions, nuts, asparagus.
