Delicious and simple, though time consuming

Recipe Ingredients for Big pot chickey rice soup

3 lb whole chicken
1 pound carrots
1 pound celery
6 cloves garlic
3 large yellow onions
4 cups rice
1 tablespoon dried sage
1 tablespoon dried thyme

Recipe Directions for Big pot chickey rice soup

  1. Boil that chicken for 3-4 hours, or until the meat just falls off the bone.

  2. Remove meat from bones, add bones back to pot.

  3. boil bones for another hour.

  4. Strain what is now awesome stock

  5. Toss chopped onions, celery, carrots, and lightly smashed garlic into now empty pot and saute until onion is translucent and garlic is fragrant. Add spices and bloom those for an additional 30 seconds.

  6. Shred that chicken.

  7. Pour meat into pot and add back that stock.

  8. simmer for 1 additional hour.

  9. add rice, simmer for 25-30 minutes

  10. put that into a bowl and serve it.

  11. Freeze the extra.
