Big Low-Fat Fruity Waffles Recipe

Two LARGE, thick Belgian waffles make one serving in this recipe for days when you want to splurge without going crazy. I use Polaner All-Fruit jam as topping. Sometimes I make a spread by mixing 3 Tbsp unsweetened applesauce with 1 Tbsp peanut butter and use 1 Tbsp per waffle. You can also use the sugar-free maple syrup.

Recipe Ingredients for BIG Low-fat fruity waffles

1 1/2 cups (Bisquick Heart Smart) baking mix
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
2 T Splenda
1 cup skim milk
1 medium apple, diced
1 medium banana, diced
2 egg whites
1/8 cup walnuts, chopped

Recipe Directions for BIG Low-fat fruity waffles

  1. In large bowl, wisk dry ingredients until well combined.

  2. In medium bowl, wisk wet ingredients until well combined.

  3. Add wet ingredients to dry ingredients and hand mix with spoon until JUST blended.

  4. Stir in chopped nuts (optional, but included in count)

  5. Put 2 cups of mix in Belgian-style 4-waffle baker (1 cup for 2-waffle baker).

  6. Cook according to directions (usually until steaming slows down considerably, then check for brownness).

  7. Enjoy!
