Bread stuffed with beef and cabbage mixture

Recipe Ingredients for Bierocks (RUNZAS)


Bread:
2 2/3 cups wheat flour
3 cups bread flour
2 tsp salt
1 egg white
1/2 cup sugar
1/4 cup light margarine, softened
2 package yeast
1 egg white

2 package yeast
2 cups warm water

Filling:
1 tsp pepper, adjust to taste
2 tsp salt, adjust to taste
2 lb lean beef
1 large onion, chopped
1 head cabbage
2 cup water

Recipe Directions for Bierocks (RUNZAS)

  1. To make bread: Mix warm water and yeast, let sit for 10 minutes until foamy. Add margarine, sugar, egg white, salt and mix lightly. Add two cups of each flour and mix until it comes together. add 1/3 cup of each flour until dough is slightly tacky, but does not stick to your hand. You can add more flour than is listed, if needede. Kneed the dough for 10 minutes and let rest, do not shape. After 10 minutes, shape into a ball and stick in a Gallon plastic bag. Let rise in a warm place until double (gallon bag will be completely filled with dough).

  2. Filling: Brown beef in a large pot. While still hot, put beef in a strainer and run under hot water to rinse the beef. Rinse out large pot and add rinsed beef. Add water, chopped onion, water, salt, pepper, and cabbage. Cover and cook over medium-high heat, stirring frequently. Cook until cabbage and onion are soft and translucent. Remove the lid and turn heat to high and cook until water dries up. Remove from heat and let cool to at least luke warm.

  3. Pre-heat oven to 300 degrees.

  4. Once dough has doubled, punch down and separate into 16 balls. Take one ball out and roll on an unfloured surface to about 1/4 to 1/8 inch thick circle. Place 2 large heaping table spoons of cabbage filling toward one side of the circle. Fold circle in half, over filling, and seal edges.

  5. Bake at 350 degrees for 30 minutes or until golden brown.

  6. Optional: When hot out of the oven, you can lightly glaze the top of each bierock with light margarine to make to bread soft.

  7. You can also freeze these. If you know you will not be able to finish them all, when you bake them, only bake them until light brown, cool, then freeze in a freezer ziplock bag. When you want to reheat, just take them out of the freezer, thaw(very important that they are thawed) and bake 300 degrees until golden brown.
