What would a Kansas Oktoberfest be without bierocks? Here is a vegan version.

Recipe Ingredients for Bierocks

2 cups warm water
1/4 oz active dry yeast (2 packages)
1/2 cup sugar
1/4 cup Earth Balance, softened
1 1/2 tsp Ener-G egg replacer
2 tbsp water
5 1/2 cups flour
12 oz Yves Ground Round
1 cup onion, chopped
6 cups cabbage, shredded
1 tsp salt
1 tsp pepper
1/4 cup Earth Balance, melted

Recipe Directions for Bierocks

  1. Prepare dough: In large bowl, dissolve yeast in warm water. Let stand until creamy (about 10 min). Mix in sugar, Earth Balance, egg replacer, salt, and half of the flour. Beat until smooth; add remaining flour until dough pulls together. Cover with foil and refrigerate for 2 hours or overnight, OR let it rise for 1 hour.

  2. In large skillet, cook Yves crumbles. Add onion, cabbage, and salt - simmer for 30 minutes. Cool until lukewarm.

  3. Punch down dough and divide into 20 pieces. Spread each piece of dough out on unfloured surface and fill with approximately 2 tbsp of filling. Fold dough over and seal the edges. Place on prepared baking sheet and let rise for 1 hour.

  4. Preheat oven to 350. Bake bierocks in preheated oven for 25 minutes or until golden brown. Brush with melted Earth Balance and serve.
