Recipe Ingredients for Bibi's Happy Fried Rice

1 cup brown rice
3 1/2 ounce tofu, diced
3/4 cup broccoli florets
1/2 cup bell peppers, sliced
1/4 cup frozen peas
1/8 cup dried cranberries
1/8 cup cashew nuts, dry roasted
2 eggs, scrambled
1 1/2 tbsp canola oil
2 1/2 tbsp soy sauce
1/2 tbsp curry powder
1 tsp ginger
4 clove garlic, minced
1/8 tbsp sesame oil

Recipe Directions for Bibi's Happy Fried Rice

Heat oil. Add garlic, curry powder and ginger for 2 minutes. Sautee veggies & tofu while rice cooks in rice cooker, and egg is scrambled separately. Add egg into veggie mixture. Add rice to veggies & eggs. Add soy sauce.
