Bi Bim Bop Recipe

This is Korean comfort food at its best. Mix up the toppings and add whatever you like.

Recipe Ingredients for Bi Bim Bop

6 oz mushrooms, sliced
6 oz carrots, shredded
6 oz zucchini, cut into matchsticks
6 oz cucumber, cut into matchsticks
6 oz baby spinach, raw
8 oz beef short ribs, broiled, sliced thin
2 tbsps soy sauce
2 cups brown rice
2 eggs

Recipe Directions for Bi Bim Bop

  1. Place the cucumber in a bowl and toss with a little salt. Let sit for 15 minutes. Meanwhile, lightly stir fry all of the other vegetables separately with a little soy sauce and set aside.

  2. Prepare the rice according to directions on the package and Broil the short ribs for about 3 minutes on each side and then cut into thin strips. Cook the eggs, sunny side up.

  3. Place the rice in the bowls, arrange the toppings with the beef in the center and the vegetables circling the outside, place the egg on top.

  4. Top with some spicy korean bean paste and if you don't have that, some siracha will suffice.
