Pickled and sauteed vegetables over rice

Recipe Ingredients for Bi Bim Bap

2/3 cups brown rice
1/4 cup rice vinegar
1 tsp sugar
1/2 tsp salt
1 carrot, cut into matchsticks
1/2 cucumber, thinly sliced
1/4 tsp chili paste, Korean (hot)
1/2 cup sweet onion, thinly sliced
4 cups baby spinach
2 cups bean sprouts
1 zucchini, halved lengthwise and thinly sliced
8 mushrooms, stemmed and sliced
2 tbs vegetable oil
2 tsp sesame oil
1/2 tsp chopped garlic
2 tsp soy sauce

Recipe Directions for Bi Bim Bap

  1. Cook rice

  2. Halve rice vinegar, sugar, and salt in two bowls, put carrot in one bowl and cucumber in the second. Toss and add Korean hot sauce to cucumber. Let stand for 20 minutes. When lightly pickled drain.

  3. Saute' bean sprouts, zucchini, and onion in 2 tsp vegetable oil and 1/2 tsp sesame oil. In another pan wilt spinach with 1/4 tsp garlic. Add soy sauce and 1/4 tsp garlic to mushrooms and cook until they absorb sauce.

  4. Whisk hot chili paste with hot water, sesame oil and sugar and set aside.

  5. To assemble divide rice into bowls and top with pickled and sauteed vegetables. Set one
