Eggplant is baked before combining with sauce and cheese. Not low calorie. (Less cheese and part-skim milk cheese can be substituted)

Recipe Ingredients for Bev's Baked Eggplant Parm

3 tbsp Egg Whites
1 medium unpeeled raw Eggplant
1 tbsp(14 g) Extra Virgin Coconut Oil
0.13 cup Brown Rice Flour
2 tbsp Coconut Flour
6 serving Spaghetti Sauce Garlic and Herb
0.5 cup Spinach
9.5 oz Mozzarella, Whole Milk Cheese
6 tsp Parmesan 100% Grated

Recipe Directions for Bev's Baked Eggplant Parm

  1. Peel and slice eggplant into 1/2 in slices. Brush lightly with virgin coconut oil, dip in egg. Combine brown rice flour and coconut flour. Dredge eggplant slices lightly in flour mixture. Place on wire rack over cookie sheet. Bake eggplant at 375 for 20 min. Turn each piece over and bake additional 15 min.

  2. Coat 10x13 baking dish with non-stick spray. Put 2 T of sauce in bottom of dish, then layer 1/4 cup of raw spinach over sauce. Top with 1/2 of the baked eggplant slices and mozzarella cheese, Pour 1/2 of remaining sauce over top. Repeat layers. End with grated parmesan cheese. Bake at 350 for 30 minutes or until hot through.
