This recipe takes as much time to prepare as it takes the pasta to cook. Oil-packed tuna works best for this. Drain thoroughly.

Recipe Ingredients for Betty's Tuna Pasta

8 oz. pasta
6 oz. tuna
2 T. olive oil
3 cloves garlic, minced
1/2 tsp. red pepper flakes
28 oz. tomatoes, drained and chopped
2 T parsley, chopped
1 T. lemon zest

Recipe Directions for Betty's Tuna Pasta

Put the water on to boil for the pasta. Thoroughly drain the tuna. Drain and chop the tomatoes. Heat olive oil. Add minced garlic and red pepper flakes. When garlic becomes fragrant add the tuna. When tuna begins to sizzle, add the tomatoes. Heat through. While sauce is cooking cook the pasta. Drain. Add lemon zest to sauce. Toss pasta and sauce. Top with chopped parsley.
