Recipe Ingredients for Betty's Frittata

1 medium onion, sliced
7 ounces spinach
1/2 c. peas
12 spears asparagus
1 pint grape tomatoes
1/4 cup Parmesan cheese
6 large eggs, beaten
1 spray of canola oil
1 salt
1 pepper

Recipe Directions for Betty's Frittata

Preheat oven to 350'. In a 12 inch skillet, saute potatoes until brown. Remove from pan. Saute onions until tender. Remove from pan. Layer potatoes in the bottom of the skillet. Top with onions. Add zucchini and spinach. Stir 2 T. Parmesan into eggs. Pour eggs over vegetables. Arrange tomatoes and pepper over top. Sprinkle with remaining Parmesan. Bake in oven for 20 -25 minutes or until eggs are set.
