Using the leanest meat you can, the lowest fat cheeses, etc. this lasagna still tastes great! It also leaves over very well for lunches if you brown-bag to work.

Recipe Ingredients for Better-For-You Lasagna

1/2 lb lasagna noodles
1 lbs lean ground turkey
48 oz pasta sauce
15 oz ricotta cheese, low fat
4 cups mozzarella, skim
1/2 cup Parmesan
2 eggs
1 tablespoon chopped garlic
2 teaspoons fennel seed
1 teaspoon rosemary, crushed
1 teaspoon oregano
1/4 teaspoon garlic salt
1 teaspoon onion powder

Recipe Directions for Better-For-You Lasagna

  1. Start noodles and prepare as directed on the box

  2. Braze meat over medium-high heat, add dry spices to meat when lightly browned and reduce heat to medium-low. Allow to cook on low for 5 minutes, covered.

  3. Add 1 2/3 jars of pasta sauce to the meat. lower heat to a simmer and let simmer for 10 minutes.

  4. In a medium mixing bowl, beat two eggs. Add 15 oz ricotta and 3 1/2 cups mozzarella. Blend until smooth. Add 1/2 cup Parmesan and mix again. Don't add the Parmesan before you blend the first time or you will have clumps of Parmesan in your dish.

  5. Spray a 13x9 casserole dish with non-stick cooking spray. Cover the bottom of the pan with a third of a jar of pasta sauce.

  6. When noodles are done; drain and rinse.

  7. Lay three noodles over the sauce in the dish. Using no more than half of the cheese mix, make a layer of cheese on the noodles as evenly as you can. Add 1/3 of your meat on top of that. Repeat that layer once more, then top with noodles and the remaining mozzarella. Bake covered for 30 minutes and uncovered for an additional 10 minutes at 375 degrees.
