A zesty way to eat your scrambled eggs! Makes a great breakfast, brunch, or lunch, and is easy to whip up! Substitute with different meats and veggies...whatever is in in the fridge works!

Recipe Ingredients for Better-than-normal Salami and Veggie Scrambled Eggs

6 eggs
1/3 cup skim milk
1/4 cup shredded cheddar cheese
1/2 leaf romaine lettuce
1/2 bell pepper
1 1/2 ounces salami (equivalent to 10 slices light salami)
1 pinch pepper
1 pinch oregano

Recipe Directions for Better-than-normal Salami and Veggie Scrambled Eggs

  1. Crack the eggs in a medium-large skillet.

  2. Add the milk.

  3. Stir (scramble!).

  4. Add chopped peppers, lettuce, and salami.

  5. Continue stirring.

  6. Add the cheese and the spices (to taste).

  7. Finish when eggs are nicely cooked and serve!
