Mom's gingerbread, a little bit healthier

Recipe Ingredients for Better Gingerbread Cupcakes

1/2 cup butter
1/2 cup Splenda
1/2 cup molasses
2 eggs
1 cup flour
1/2 cup whole wheat pastry flour
1 tsp baking soda
1/2 tsp salt
1 tsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/4 tsp allspice
1 cup hot water

Recipe Directions for Better Gingerbread Cupcakes

  1. Mix butter and sugar. Add eggs and beat well, Add molasses and mix.

  2. Sift in all dry ingredients and stir.

  3. Add 3/4 cup hot water and beat. Add remaining 1/4 cup water and beat until smooth.

  4. Pour 1/4 cup batter into 18 lined cupcake cups. Bake 18-20minutes at 350 degrees.

  5. Serve hot or cold, plain or with whipped topping or cream cheese frosting.
