Better Bran Muffins Recipe

The test kitchen prefers Kellogg's All-Bran Original cereal in this recipe. Dried cranberries or dried cherries may be substituted for raisins. Low-fat or nonfat yogurt can be substituted for whole milk yogurt, though the muffins will be slightly less flavorful.

Recipe Ingredients for Better bran muffins

1 cup cranberries
1 tsp water
2 1/4 cups fiber One cereal
1 1/4 cups flour
1/2 cup whole wheat flour
2 tsp baking soda
1/2 tsp salt
1 large egg
1 large egg yolk
2/3 cup brown sugar
3 tbsp molasses
1 tsp vanilla extract
6 tbsps unsalted butter
1 3/4 cups lowfat sour cream

Recipe Directions for Better bran muffins

  1. preheaat oven to 400 degrees

  2. spray muffin pan with nonstick cooking spray

  3. put cranberries in measuring cup with the tsp water. cover with saran wrap and use a paring knife to cut steam vents. Let sit, plump and cool for 5 minutes. transfer to paper lined plate and let cool.

  4. process 3/4 of bran cereal in food processor until finely ground. Put all dry inredients in a bowl and mix. Hen in a hole in the center, put wet ingredients. Mix about a minute. THen fold in cranberries.

  5. Use a 1/3 cup ice cream scoop to fill cups. do not level.

  6. Cook 16-20 minutes at 400 degrees. Cool muffins in pan for 5 minutes then transfer to cooling rack for 10 min before serving.
