Modified from The Biggest Loser cookbook. I doubled the recipe (which produced 5 scant pancakes rather than the 8 it said it would) and omitted the salt as there was already quite a bit of sodium in the baking soda. I also used Egg Beaters instead of egg whites. These servings are twice as large as in the cookbook -- a half serving would be two pancakes, basically.

Recipe Ingredients for Better Blueberry Pancakes (The Biggest Loser)

3 1/5 serving Oat Flour
1 cup Cultured Fat Free Buttermilk
1/2 cup Egg Beaters
1 tsp Vanilla Extract
1 tsp Baking Soda
1 cup Fresh Frozen Wild Blueberries

Recipe Directions for Better Blueberry Pancakes (The Biggest Loser)

In medium bowl, combine dry ingredients (one cup oat flour and baking soda). In small bowl combine wet ingredients (1 cup buttermilk, 1/2 cup Egg Beaters, 1 teaspoon vanilla extract). Add wet to dry ingredients, along with frozen blueberries and stir until just mixed. Prep skillet by heating until a drop of water sizzles on it, then spritzing a few sprays of butter spray. Pour quarter-cup dollops of batter in pan and cook until bubbles form on surface of pancakes. Flip and cook a few minutes more, until browned. Serve with no-calorie syrup (I like Walden Farms) and additional fresh fruit, if desired.
