Recipe Ingredients for Betsy's cacciatore

200 grams Chicken
1 small Peppers, Sweet, Red
1 small Peppers, Sweet, Green
2 serving White Cooking Wine
1 medium (2-1/2" dia) Onions
4 clove Garlic
4 oz Mushrooms
2 tbsp Extra Virgin Olive Oil
1.5 cup Diced Tomatoes, No Salt Added
1 tsp Pepper, Red Or Cayenne
1 tsp Oregano, Ground

Recipe Directions for Betsy's cacciatore

rinse off chicken and pat dry. season with salt and pepper, then brown using high to moderate heat in saucepan with the extra virgin olive oil (watch so that oil doesn't burn, reduce heat if you have to). brown on each side for a total of about 8 min. then place on paper towel and set aside. saute the onion and peppers in the same pan until soft, about 5 minutes on moderate heat. Add mushrooms and cook until mushrooms are brown, then add garlic and cook for 30 seconds, stirring. add wine and cook until reduced by half. add the tomatoes with juice along with all of the spices and simmer, covered for about 10 minutes. return the chicken to the pan and cook until chicken is done about 20 minutes.
