Recipe Ingredients for Betsy Eggplant Parmesan

2 1/2 pounds eggplant
1 cup onion
1 tsp garlic
2 tbsp olive oil
2 pounds tomato sauce
1/2 tsp pepper
4 cups mozzarella cheese
1/2 cup parmesan cheese

Recipe Directions for Betsy Eggplant Parmesan

In a large saucepan cook sliced eggplant in salted water until tender; drain on paper towels. In a saucepan saute chopped onion and crushed garlic clove in oil until tender. Stir in tomato sauce and pepper. Simmer for 10 minutes. In a lightly greased 9" baking dish, layer half the eggplant, half the sauce, half of grated mozzarella cheese, and half of grated Parmesan cheese; repeat the layers. Bake at 350 degrees for 30 minutes.
