Recipe Ingredients for Beth's Red thai curry

5 1/2 cups Lite
2 cups red pepper
1 cup green pepper
2 cups sweet potato
1 cup snow peas
1 cup bamboo shoots
3 cups Japanese Eggplant
40 grams palm sugar
2 tablespoon fish sauce
1 7/10 pounds chicken breast
1 teaspoon ginger
2 tablespoon thai basil
3/4 cups red curry paste

Recipe Directions for Beth's Red thai curry

  1. bring coconut milk to boil, add paste & mix

  2. add chicken and veggies and turn down to medium until chicken cooked through. can roast chicken an veggies before adding to curry if desired, esp the sweet potato

  3. serve on jasmine rice
