Recipe Ingredients for Beth's Chopped Salad

1 head romaine lettuce, finely chopped
1/2 cup cooked chick peas
1/2 cup cooked pinto beans
1/4 cup green onions, chopped
1 cucumber, peeled and diced
2 tomatoes, diced
1/8 cup reduced fat Monterey Jack cheese, shredded
1/2 pound asparagus
1/8 cup balsamic vinegar
1 teaspoon Dijon mustard
1/4 cup olive oil

Recipe Directions for Beth's Chopped Salad

  1. Steam or roast the fresh asparagus and chop.

  2. Toss all salad ingredients together in a medium bowl. Mix together the vinegar and mustard. Slowly whisk in the olive oil and season with salt and pepper to taste. Dress the salad with the vinaigrette and serve
