1/3 cup oats
1 banana
1/2 cup egg beaters

Recipe Directions for Bethany's Protein Pancakes

  1. I like to grind the oats in a coffee grinder, since I prefer mine not to be chunky. This isn't necessary, just a preference. I do 1/3 cup oats set at the espresso setting.

  2. Combine all ingredients in a bowl and mix together until smooth.

  3. Heat pan/griddle on medium-low heat (3-4) until hot.

  4. Add negligible amount of oil - I have a misto, so I use that. You could also use a non-stick cooking spray.

  5. Add 1/4 cup batter to the pan, and heat until cooked thoroughly. Flip and cook other side.

  6. (Makes about 6)
