Use fresh or frozen rhubarb for this pretty dessert.

Recipe Ingredients for Best Rhubarb Shortcake

4 cups rhubarb
3/4 cup sugar
3 tablespoons butter
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 cup sugar
1 tablespoon cornstarch
1/4 tsp salt
1 cup boiling water

Recipe Directions for Best Rhubarb Shortcake

  1. Place cubed or crushed rhubarb in 8x8 pan.

  2. Cream sugar and butter.

  3. Mix flour, baking powder and salt.

  4. Add milk and flour mixture to creamed mixture to creamed mixture.

  5. Spread over rhubarb.

  6. Combine 1 cup sugar, cornstarch and salt.

  7. Sprinkle over top.

  8. Add a few drops of red food coloring (if desired) to the boiling water and pour over top.

  9. Bake in 350 degree oven for 1 hour.
