Scrumptious and easily vegan, this non-dairy pumpkin pie met with great approval this Thanksgiving.

Recipe Ingredients for The Best Pumpkin Pie Filling

15 oz. canned pumpkin
1/4 cup white sugar
1/4 cup light brown sugar
1/2 teaspoon salt
3 teaspoons Cinnamon, Ground
1 teaspoon ground ginger
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon freshly ground allspice
1/4 teaspoon freshly ground cloves
1 tablespoon Vanilla Extract
4 egg whites
12 oz. Creamer French Vanilla

Recipe Directions for The Best Pumpkin Pie Filling

  1. Prepare your favorite pie crust (or skip, to save the calories! Filling is yummy pumpkin pudding all on its own).

  2. Preheat oven to 425 degrees.

  3. Combine the white and brown sugar, salt, cinnamon, ground ginger, nutmeg, allspice and cloves in a bowl. Add this to the pumpkin. Gradually add the creamer and vanilla extract.

  4. In a separate bowl, beat the egg whites until stiff. Fold in just prior to baking.

  5. Pour into the prepared pie shell. Do not overfill the pie.

  6. Bake at 425 degrees for 15 minutes, then turn the oven down to 350 and continue to bake for an additional 40-50 minutes. Pie is done when knife inserted in center comes out clean.

  7. Cool on wire racks.

  8. Serve with whipped cream.
