These are, hands down, the BEST pancakes. Everyone I've ever served them to has agreed with me. They're a snap to make, and I make them so often I have this recipe memorized. Try them, you'll see they're the best pancakes you'll ever have. I'll often put a little vanilla extract in them, or dress them up with some stewed apples and cinnamon or even (gasp) chocolate chips! Yum...

Recipe Ingredients for Best Pancakes Ever!

1 egg, beaten
2 tbsp butter, melted
1 cup skim milk
1 cup all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/4 tsp salt

Recipe Directions for Best Pancakes Ever!

  1. Heat a skillet or griddle over medium-ish heat and spritz with cooking spray.

  2. Beat the egg and the melted butter together.

  3. Add the skim milk and (optional) vanilla extract.

  4. Combine the flour, sugar, baking powder, and salt in a separate bowl.

  5. Combine the wet and dry ingredients, stirring as little as possible (you don't have to get all the lumps out. It'll be okay, I promise).

  6. I use a 1/4 cup measure to mete out the batter onto the hot skillet. Better portion control that way.

  7. Once bubbles form in the pancakes that pop but don't fill in again, it's time to flip.

  8. Serve piping hot, golden, brown, and delicious!
