Got this from Peak of the Market, haven't tried it, so I guess "best" might not be true, lol

Recipe Ingredients for Best Overnight Salad

1/4 cup olive oil
1 tbsp lemon juice
1 clove garlic (crushed)
1/2 tsp salt
1/4 tsp pepper
1 english cucumber, (cut into bite size chunks)
16 cherry tomatoes (halved)
1 fennel bulb, diced
1/2 cup red onion, finely diced
1/2 red pepper
1/4 cup fresh mint, chopped
1/4 cup parsley, chopped
1/2 cup feta cheese,

Recipe Directions for Best Overnight Salad

  1. In a small bowl; whisk together oil, lemon juice, garlic, salt and pepper.

  2. In a large bowl; combine vegetables and herbs.

  3. Toss with dressing. Add cheese and mix well.

  4. Refrigerate overnight and serve.
