I found a recipe years ago in a pamphlet for the American Cancer Society for lentil soup that I have been making a version of ever since. I've never written it down and the original is long gone but this is my best approximation. It has no spices, just salt and pepper and fresh garlic (which isn;t actually a spice) and somehow that is it's best feature. I always use brown lentils as they keep their shape and don't turn into mush. The soup freezes well.

Recipe Ingredients for Best Lentil Soup in the World

1 Olive oil spray
453 1/2 g lentils, green, dry
1 onion, large
2 T Garlic
1 head cabbage
2 potatoes
1 1/2 cups Mung Beans, Mature Seeds, Sprouted
1 pound spinach
2 vegetable bouillon cubes
1 lb carrots
453 1/2 g celery
12 cups water
4 cups V-8 juice
1 tsp salt
1 tsp pepper
15 oz tomatoes, crushed

Recipe Directions for Best Lentil Soup in the World

  1. Spray a large heavy stock pot with olive oil spray. Saute the onions and garlic for a minute or two.

  2. Add chopped celery, shredded carrots, shredded potatoes and sauté until starts to soften.

  3. Add the lentils, tomatoes, water, V-8, bouillon cubes, salt and pepper.

  4. Bring to a boil, turn down the heat and simmer until the lentils aren't hard in the middle. Add more water as needed to make it the consistency you prefer.

  5. Adjust seasoning at the end as needed.
