Recipe Ingredients for Best of Everything Veggie Burgers

1/2 cup uncooked brown rice
1 cup water
3 cups black beans
1/2 onion, chopped
1 lb mushrooms, sliced
3/4 cup mozzarella cheese, grated
2 eggs
1 tbsp garlic granules
1 tsp chili (or chipotle)
1 cup dried bread crumbs

Recipe Directions for Best of Everything Veggie Burgers

  1. Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 45 to 50 minutes.

  2. Mash black beans in a large bowl with a fork until thick and pasty; set aside.

  3. Place the onion, and mushrooms in the bowl of a food processor, and chop finely. Stir the mixture into the mashed black beans.

  4. Place the brown rice and mozzarella cheese in the food processor, and process until combined. Stir the mixture into the black beans.

  5. Whisk together the eggs, chili powder, and garlic granules. Stir the egg mixture into the black bean mixture. Stir in the bread crumbs, adding additional bread crumbs as needed until the mixture is sticky and holds together.

  6. Divide into 6 large patties.

  7. Place patties in a pan heated over medium-high heat. Cook until browned and heated through, about 8 minutes per side.
