Recipe Ingredients for Best Ever Southwestern Corn Chowder (A-)

16 oz whole kernel corn, drained
2 chopped medium potatoes
1/2 chopped onion
1/2 cup chopped bell pepper
2 cloves garlic, minced
1 tbsp flour, unbleached
1/2 teaspoon salt
2 cups chicken broth
2 cups lowfat milk, 1%
3 tbsp light margarine

Recipe Directions for Best Ever Southwestern Corn Chowder (A-)

  1. In a large pot, bring chicken broth to a slow boil over medium heat and add corn, chopped potatoes, onions, bell peppers, and garlic.

  2. In a small bowl whisk flour into a few tablespoons of the milk until well-blended. Add mixture to the rest of the milk and whisk again.

  3. When potatoes are slightly tender add the milk/flour mixture to the pot along with the margarine and salt.

  4. Let simmer for another 15-20 minutes.

  5. Serve garnished with some chopped parsley or coriander.
