These protein bars are very high in protein and high in fiber. They are the best tasting protein bars that I have ever made. They do take a bit of work, but the outcome is awesome.

Recipe Ingredients for Best Ever Protein Bars

5 egg whites
16 oz Turbinado sugar
2 oz honey
1/2 cup cold water
3 envelopes gelatin
1/2 cup cold water
2 teaspoons vanilla
5 cups oatmeal
1 1/2 cup barley
12 scoops whey protein
1 cup powdered milk
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup goji berries
5 cups rice krispies cereal
1 cup flax seed, ground
1 cup wheat bran
2 cups peanuts, roasted, without salt
2 tablespoons butter

Recipe Directions for Best Ever Protein Bars

  1. Prepare two 9x13 pans by spraying them with cooking spray.

  2. Place all dry ingredients in a very large bowl, this makes a huge amount of mixture and you will need room to mix this.

  3. Place sugar 1/2 cup cold water and honey in a medium size pan on medium heat on the stove.

  4. Place 1/2 cup of cold water in a small pan and sprinkle gelatin over the cold water to bloom.

  5. Place the 5 egg whites in a mixer bowl with a whisk attachment.

  6. Let honey and sugar mixture come to a boil, and when the mixture reaches 230 degrees farenheight on the candy thermometer start whipping the egg whites at high speed. Continue watching the honey sugar mixture and when it reaches 245 degrees remove it from the heat.

  7. At this point you can turn the heat on low and place the small pan containing the gelatin on the heat to melt. This only takes a minute so watch it closley.

  8. As soon as this is complete begin pouring the sugar-honey mixture into the mixing bowl containing the beaten egg whites, do this while the mixer is on medium speed and be sure not to pour it directly on to the beater attachment.

  9. Add the warmed gelatin the same way. Turn the mixer back onto high and mix until it has a smooth, light and fluffy consistency.

  10. Add vanilla.

  11. Melt the butter in the microwave and add to the egg white mixture, beating until incorporated.

  12. Add egg white mixture to dry ingredients and mix quickly.

  13. Divide this mixture in half and spread into prepared pans. Let cool until somewhat firm and cut with a pizza cutter into 30 bars.
