A really delicous, standard bread. If you don't want to bake six loaves of bread at once, simply freeze the formed loaves after their first proofing. Wrap them tightly with cling wrap and place in a freezer zip top bag. Once you are ready for fresh bread, take the loaves down and set them in a greased pan. It will take several hours (5-6) for the dough to thaw, but once thawed and warmed to room temperature it will rise up for its second proofing. Bake and enjoy!

Recipe Ingredients for Best Damn Bread

1/2 cup warm water
1 1/2 tbsp active dry yeast
1/4 cup bread flour
1 tablespoon white sugar
2 cups quick cooking oats
2 cups rye flour
4 1/2 cups warm water
1 1/2 tablespoons salt
2/3 cup brown sugar
2/3 cup vegetable oil
10 cups bread flour

Recipe Directions for Best Damn Bread

  1. Activate yeast by combining it with 1/2 cup warm water, 1 tbsp sugar, 1/4 c bread flour, and yeast in a large bowl. Allow mixture to sit for about 5 minutes--if after five minutes there are no (or few, it should be pretty frothy) bubbles your yeast might be too old or your water too hot/cold.

  2. Add oats, 4 1/2 cups warm water, rye flour, salt, 2/3 cup sugar, and 2/3 cup oil to the yeast mixture. Mix well for a minute or two until all ingredients are well combined. Slowly begin adding remaining bread flour about a cup at a time until a dough forms. This is a sticky dough! Dump out onto a floured surface and kneed lightly 4-5 minutes.

  3. Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.

  4. Divide dough into 6 pieces. Shape loaves, and place in greased 9x5 inch pans. Let rise until dough is 1 inch above rim of pans, usually 1 hour.

  5. Bake at 350 degrees F for 35 minutes, or until tops are browned. Let cool in pans for 10 minutes, and then turn out onto wire racks to cool completely.
