Crispy baked chicken breasts... after a brine (which I didn't know how to account for here)

Recipe Ingredients for The best chicken ever

2 chicken breast, meat only
1 tbs dijon mustard
1/4 egg
1/8 cup milk
2 tbs flour
10 Crackers
1/4 cup panko bread crumbs
1/3 cup parmesan cheese

Recipe Directions for The best chicken ever

  1. overnight - brine 2 large chicken breasts in 2 cups warm water, the juice of one lemon (I tossed the lemon wedges in there) some garlic powder, and about 2 tsbs (maybe a little more) of salt (pepper and water spices).

  2. The next day, I cut them in half, patted them dry, dusted them with two tbs of flour (shake off excess)

  3. Let them sit while I prepped the rest of the dredge.

  4. Mix about 1/2 cup milk (buttermilk, watever), an egg, and a Tbs or two of dijon mustard - wisk until combined completely.

  5. On a plate, crush ritz, mix with panko, parm and whatever spices you like.

  6. Dredge the floured chicken, place on a rack in the oven 375 for about 40 minutes... test to see that they are done / juice is clear.

  7. DELICIOUS!
