Thanksgiving Classic but also good on a cold winter night...or a snowy spring night for that matter!

Recipe Ingredients for Best Butternut Squash Soup

4 cups of butternut squash, peeled, seeded and cubed into 1" pieces (one large squash)
1 tablespoon of olive oil
1 tablespoon of salt
3 cups of fat free chicken broth
1/2 cup of fat free half and half
1/2 tsp nutmeg
1 salt and pepper to taste

Recipe Directions for Best Butternut Squash Soup

  1. Toss the cubed and peeled butternut squash with the olive oil and salt.

  2. Place on a large cookie sheet or jelly roll pan (with sides).

  3. Roast for 45 minutes in the oven at 400 degrees until tender and it looks GBD (Golden, Brown and Delicious-as coined by Alton Brown)

  4. Place the squash in a large stock pot over medium heat. Add the chicken broth a little at a time, stirring constantly. Only add enough broth to barely cover the squash- you might need a little more or less depending on how large your squash was :)

  5. Bring the squash & broth to a low boil.

  6. Grate about 1/2 tsp of freshly grated nutmeg (yes, this is important) into the squash. Stir to incorporate.

  7. Using a stick blender, blend the soup until smooth and creamy. You can use a counter blender, but it's hot and messy. Spend the $10- you will use the stick blender forever and for many things like soup, sauces and smoothies.

  8. Warm the fat free half and half in the microwave for about 1 minute.

  9. Pour into the soup and mix very well to incorporate. You might need a little more if the soup is too thick.

  10. Add salt and pepper to taste. You can also serve this with a dollop of sour cream, but the calorie count does not include this- but is is fantastic!!
