Recipe Ingredients for Best Buttermilk Pancakes

1 1/2 cups unbleached all-purpose flour
1 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 tbsp sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 tbsp unsalted butter, melted

Recipe Directions for Best Buttermilk Pancakes

  1. Heat griddle to 375 degrees. Whisk together flour and next 4 ingredients in a medium bowl. Add eggs, buttermilk, and butter; whisk to combine. Batter should have small to medium lumps.

  2. Test griddle by dropping water drops on it; if they dance, the griddle is hot enough. Put 1/2 teaspoon of butter on griddle or spray with the non-stick spray of your choice.

  3. Using a 1/2 cup measure, ladle batter onto griddle, leaving room for it to spread. When batter has bubbles on top and edges begin to dry a bit, flip over. Look for golden brown coloring on cooked side.
