Loaded with bran and sweet. That is why my husband loves them. He eats one with unsweetened home canned apple sauce as jam.

Recipe Ingredients for best bran muffins with raisins

3 cups bran cereal
1 1/4 cup raisins
2/3 cup oil
2 cups molasses
1/4 cup honey
2 large eggs
2 1/4 cup flour
1 cup boiling water
2 1/2 tsp baking soda
1/2 tsp salt
1/4 cup brown sugar

Recipe Directions for best bran muffins with raisins

  1. First bowl

  2. bran cereal, raisins and oil -- pour boiling water over all, mix it up and move to next step

  3. Let it cool a bit

  4. Second bowl

  5. buttermilk, molasses, honey, eggs -- mix well and add to first bowl

  6. Third bowl

  7. flour, can substitute some whole wheat flour, sugar, baking soda and salt, Mix it up and add to the first bowl.

  8. Stir all together just until white flour disappears or even a little white showing.

  9. Cover with a towel and let rise/sit for one hour

  10. Preheat oven to 400 degrees

  11. Bake in middle of oven for about 20 minutes or when that "straw" comes out clean.

  12. Makes about 24 muffins. I use cupcake papers in the muffin tins.
