Delicious blueberry muffins made with yoghurt

Recipe Ingredients for Best Blueberry Muffins

2 cups flour, all purpose
1 cup flour, cake and pastry
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4 tbsp butter, unsalted, softened
1 cup sugar
2 eggs, large
1 1/2 cups yoghurt, plain
1 tsp lemon peel, grated
2 cups blueberries
1 tbsp flour, all purpose
2 tbsp sugar, coarse
1/2 tsp nutmeg, ground

Recipe Directions for Best Blueberry Muffins

  1. Adjust the oven rack to the lower middle of the oven and preheat to 375°F.

  2. Place flour, baking powder, baking soda and salt in a bowl and mix well.

  3. In a large mixing bowl, cream butter and sugar together, beating until fluffy.

  4. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.

  5. Beat one half of the dry ingredients into the eggs and butter until just incorporated. Beat in one third of the yoghurt. Beat in half of what is left of the dry ingredients, and then a second third of the yoghurt. Beat in the remainder of the dry, and then the remaining yoghurt. Again be careful to beat until just incorporated. When mixing , be careful not to overbeat the ingredients, or the muffins will be tough. It is ok for the mixture to have a few lumps.

  6. Dust the berries with the 1 Tbsp of flour and fold them in carefully. You can use frozen blueberries, but defrost them first, and drain off all the liquid before dusting with flour.

  7. Use a standard 12-muffin muffin tray. Spray with Pam and dust with flour. Distribute the dough evenly among the cups, and dust with nutmeg and the coarse sugar.

  8. Bake until the muffins are golden brown, about 25 to 30 minutes. Test with a toothpick to make sure the centre of the muffins are done. Set pan on wire rack for about 5 minutes to cool and then remove the muffins from the pan
