Delicious and healthy blueberry muffins!

Recipe Ingredients for Best Blueberry Muffins

1/2 c Butter (Can substitute 1/4 applesauce)
3/4 c sugar (use Sucanaut as a healthy substitute)
2 eggs
1 t Vanilla extract
2 t Baking Powder
1/4 t Salt
2 1/2 c blueberries
2 c flour (fresh milled whole wheat flour)
1/2 c nonfat Milk

Recipe Directions for Best Blueberry Muffins

  1. cream together butter and sugar, add eggs one at a time. Mix together dry ingredients and then add to the butter/sugar mix. Spoon into 12 regular muffin cups and then sprinkle with nutmeg mixed with raw sugar.

  2. Bake on 375 for 25-30 minutes or until golden brown.
