Easy, cheap and delicious! You can add some sausage if you want. Just remember to add the calories.

Recipe Ingredients for Best Beans and Rice Ever!

3 cups of dry pinto beans
2 cans of chicken broth (seasoned with roasted garlic)
8 oz (2 small cans) of chopped chilis
3 teaspoons salt
1 cup uncooked rice

Recipe Directions for Best Beans and Rice Ever!

  1. soak beans overnite

  2. rinse

  3. put in crockpot

  4. Add chicken broth, chilis, and salt

  5. Add water to cover

  6. mix

  7. cook on high for about 6 hours.

  8. If needed pour off some of the thin liquid

  9. mash to thicken

  10. allow to thicken to desired consistency

  11. Make rice

  12. I used enough for 4 servings of long grain brown rice

  13. 1 cup of dry rice and 2 cups water

  14. bring to a boil and then cover and simmer for 30 minutes

  15. Mix the beans and rice together and call it lunch
