Recipe Ingredients for Best Banana Bread

4 bananas, large and over ripe, mashed
1/2 cup sugar
1/2 cup unsalted butter
2 large eggs, lightly beaten
2 cups unbleached flour
1 tsp baking soda
1 tsp salt

Recipe Directions for Best Banana Bread

  1. Cream together butter and sugar, add the mashed bananas and eggs.

  2. Sift the flour, soda and salt and add slowly to the wet mixture. Mix until well blended.

  3. Pour into a greased 9 x 5 loaf pan. Bake for 1 hour at 325 in a glass pan or 350 in a metal pan. Test for doneness in several places. Toothick sould come out clean from all.

  4. Cool in pan for 10 minutes then remove to a cooling rack. Wrap well in plastic wrap and foil and it will keep refrigerated for about a week.
