Recipe Ingredients for Best Baked Butternut Squash

2 cups almond milk
4 tablespoons olive oil buttery spread
10 1/2 gram stevia(Truvia)
4 tablespoons wheat flour
1 1/2 pounds butternut squash
4 large eggs (well beaten)
2 tablespoons olive oil

Recipe Directions for Best Baked Butternut Squash

  1. The night before, or a couple of hours before making the casserole, preheat the oven to 350. Wash and slice lengthwise the butternut squash into two pieces. Lightly dig out the seeds and pulp. Rub a tablespoon of extra virgin olive oil on the cut side of each piece. Set them in a pan cut side up, and bake in the oven for 55 minutes. Let the pieces cool a little before carefully peeling and dicing them. Store in sealed container in the refrigerator, or set aside.

  2. Preheat oven to 400. Boil 1 1/2 cups almond milk with olive oil buttery spread and truvia sweetener. Meanwhile, dissolve flour in 1/2 cup almond milk.

  3. Pour flour mixture into almond milk mixture to make a thin white sauce. Add to diced squash in a 9 x 13 casserole dish.

  4. Mix in beaten eggs. Bake for 1 hour.
