From Cranks Bible, Nadine Abensur: broad bean (fava bean) dip. Made with 300g frozen broad beans rather than 120g dried.

Recipe Ingredients for Bessara

120 g fava beans
100 ml water
3 garlic cloves
1 tbsp olive oil
1 tsp paprika
1 tsp cumin
1/5 tsp salt
1 tsp cayenne
2 tbsp fresh coriander, ripped up

Recipe Directions for Bessara

  1. Boil broad beans till tender, then put into food processor and blend with the chopped garlic and a little of the cooking liquid.

  2. Pour in the olive oil, whilst blending (I have used less than stated in the recipe - it recommends double this and an extra tablespoon swirled in to serve).

  3. Add the paprika and cumin, reserving a little to sprinkle on the top.

  4. Add the salt and cayenne and stir in.

  5. Put in a serving dish, sprinkle reserved paprika and cumin and garnish with coriander leaves.

  6. Serve with raw veg, pitta, grilled courgettes & aubergines, etc...
