Oatmeal Cake with German Frosting

Recipe Ingredients for Berta's Oatmeal Cake


Oatmeal Cake:
1 cup quick oats
1/2 cup butter
1 1/4 cups boiling water
1 cup brown sugar
1 cup white sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups flour
2 eggs

Icing:
1/2 cup butter
1/4 cup evaporated milk
1/2 cup sugar
1 egg
1 cup coconut
1 tsp vanilla

Recipe Directions for Berta's Oatmeal Cake

  1. Mix the first three ingredients of the cake together and let stand for 20 minutes.

  2. Mix the remaining ingredients and then combine with the first mixture.

  3. Mix well by hand, pour into well-greased pan, 35 min at 350.

  4. For the Icing: Cook all ingredients slowly and stir until thick/creamy, pour over cake while hot and bake a few minutes.
