Recipe Ingredients for Berry Rice Custard

2 eggs, extra large
2 cups fat free milk
3 tablespoons Splenda
1 dash cinnamon
1 dash ginger
2 cups brown rice, cooked
2 cups mixed berries

Recipe Directions for Berry Rice Custard

  1. Preheat oven to 350.

  2. Whisk together eggs and milk.

  3. Add Splenda and spices

  4. Spray a 2 quart baking dish or cassarole with non-stick cooking spray.

  5. Mix together rice and berries in baking dish.

  6. Pour in egg/milk mixture, stir.

  7. Place in hot oven for 1 hour or until an inserted knife comes out clean.

  8. Allow to cool for about 20 minutes.
