From Better Homes & Gardens: Blueberry Muffins...with some changes

Recipe Ingredients for Berry Muffins

1 3/4 c. whole wheat flour
1/2 c. brown sugar
1/4 t. sea salt
2 t. baking powder
1 egg
3/4 cup 2% milk
1/4 cup unsweetened applesauce
3/4 cup chopped strawberries

Recipe Directions for Berry Muffins

  1. Lightly grease 12 cup muffin pan; preheat oven to 400.

  2. Mix flour, sugar, salt, & baking powder in medium bowl.

  3. Lightly beat egg.

  4. Mix together egg, milk, and appleasuce in small bowl.

  5. All at once, add egg mixture to flour mixture.

  6. Stir until just combined.

  7. Fold in strawberries.

  8. Bake at 400 for 18-20 minutes.
