Recipe Ingredients for Berry Berry Good Crispy Cheese Salad

2 wedges cheese
1 tablespoon strawberry preserves
1 teaspoon poppy seeds
1 teaspoon balsamic vinegar
2 tablespoons vinaigrette
1 kosher salt
1 black pepper
1 tablespoon flour
1 egg white, beaten
2 tablespoons panko
2 tablespoons vegetable or canola oil, for frying
2 cups arugula (or spinach)
5 fresh strawberries, sliced

Recipe Directions for Berry Berry Good Crispy Cheese Salad

  1. To prepare the dressing: in a small bowl, combine strawberry preserves, poppy seeds, balsamic vinegar and vinaigrette. Season with salt & pepper; set aside.

  2. Set up ingredients for breading. Place the flour, beaten egg white & panko flakes in separate, shallow containers. Bread each wedge individually.

  3. Dredge cheese wedge in flour to coat; shake off excess.

  4. Dip coated wedge into beaten egg white; remove with fork, allowing for excess egg to drip off.

  5. Transfer to panko flakes; coat well on all sides. Repeat with other wedge and set aside.

  6. Add oil to a small 8-inch, non-stick pan. Heat pan on medium heat for about 2 minutes. **Cook?s Tip: test the pan?s heat by adding a few stray panko flakes into the oil. If the oil reacts by bubbling gently around the crumbs, you?re ready to fry.**

  7. Add breaded cheese wedges to heated oil and pan-fry until golden brown (approximately 1 minute on each side; 30 seconds on each edge.) Gently, remove from pan and transfer to a paper towel-lined plate for excess oil to drain.

  8. In a medium bowl, combine arugula with strawberry dressing and sliced strawberries. Serve with crispy wedges.
