Recipe Ingredients for Berry Delicious Citrus and Pistachios

2 cups wheat berries
4 cups water
1 tablespoon extra-virgin olive oil
1 cup onion, chopped
2 teaspoons garlic, minced
5 1/2 teaspoons ground cumin
1 cup red bell pepper, seeded and diced
1/2 cup dried apricots, diced
1 cup chopped fresh orange
1/8 teaspoon salt
1 Freshly ground pepper, to taste
1/2 cup sliced green onions
1/2 cup pistachios, slightly toasted

Recipe Directions for Berry Delicious Citrus and Pistachios

  1. If you have cooked frozen wheat berries, defrost; or cook 2 cups of wheat berries in 4 cups water for about 1 ¼ hour, until tender.

  2. Toast the pistachios in a dry skillet. Sauté onions in oil, until lightly browned. Add garlic and cumin and stir for a minute. Add the red bell pepper ? stir. Add the orange, salt and pepper and stir in the cooked wheat berries. Add the apricots and stir all ingredients; add water as needed (about ½ cup). When heated through, put into serving dish and sprinkle with green onions and pistachios.
