Not low cal but very delicious muffins where you can use any fruit, fresh or frozen.

Recipe Ingredients for Berry Cream Muffins

2 cups all-purpose flour
1 cup white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups blueberries
2 eggs, lightly beaten
1 cup sour cream
1/2 cup vegetable oil
1/2 tsp vanilla

Recipe Directions for Berry Cream Muffins

  1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt; add berries and toss gently. Combine eggs, sour cream, oil and vanilla; mix well. Fold into dry ingredients just until moistened. Fill greased or paper-line muffin cups. Bake at 375F for 20-25 minutes or until muffins are golden brown.
