Low-fat muffin great for breakfast or a snack. Variations: You can add cranberries instead of raspberries

Recipe Ingredients for Berry Citrus Muffins

2 cups all-purpose flour
2 tbsp honey
3 tsp baking powder
3 tsp grated lemon or orange peel
1/4 tsp salt
1/2 cup freshly squeezed orange juice
1 tbsp butter
1 egg
3/4 cup frozen blueberries
3/4 cup frozen raspberries

Recipe Directions for Berry Citrus Muffins

  1. Heat oven to 400F. Line 12 muffin cups with paper baking cups. In large bowl, combine flour, baking powder, lemon peel and salt; mix well.

  2. In small bowl, combine orange juice, butter, eggs and honey; blend well. Add to flour mixture; stir just until dry ingredients are moistened. (Batter will be very thick)

  3. Gently stir in berries. Divide batter evenly into paper lined muffin cups, filling each 3/4 full.

  4. Bake at 400F for 18 to 25 minutes or until muffins are light golden brown and toothpick inserted in center comes out clean. Cool for 1 minute; remove from pan. Serve warm.
