Recipe Ingredients for Berry Bran Muffins

1 1/2 cups wheat bran
1 cup skim milk
1 tbsp vinegar
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup berries

Recipe Directions for Berry Bran Muffins

  1. Add the vinegar to the milk, let sit for a minute.

  2. Mix milk/vinegar mixture with bran. Let sit for 10 minutes.

  3. Mix remaining wet ingredients.

  4. Sift together dry ingredients. Combine wet with milk/bran mixture then gradually add dry ingredients and berries. Mix till blended.

  5. Bake at 375 for 15 minutes.
