Recipe Ingredients for Berry Balsamic Dijon Reduction for Pork Tenderloin

1/4 cup mixed berries
1 tbsp balsamic vinegar
1/2 tbsp dijon mustard
1 tbsp margarine
1/4 cup onion, finely diced
1/4 cup water

Recipe Directions for Berry Balsamic Dijon Reduction for Pork Tenderloin

  1. In a small saucepan, saute the onion in margarine until carmelized. Add berries, dijon mustard and water and bring to boil. Reduce and let simmer for about 5 minutes. Add balsamic vinegar and let simmer until reduced in half. You can add a little no calorie sweetener if it's too tart for your taste.

  2. Spoon in over pork tenderloin you have roasted in the oven. Should make enough to serve two but could be stretched out over 4 servings
